Ingredients
1 1⁄2 lb
Ground Beef 1 c
Rice 1⁄4 c
Onion (Diced finely) 1 t
Salt 1⁄4 t
Pepper 6
Bell Peppers (Any color) 2 cn
Roasted Tomatoes with Garlic (Diced) 1 c
Mozzerella (Shredded)Instructions
- In a bowl, thoroughly combine ground beef, rice, salt, pepper and 1 can of tomatoes.
- Cut the tops off the peppers, remove the seeds, wash and dry.
- Stuff each pepper with the meat mixture.
- Place peppers in slow cookerand put pepper caps back on, if desired.
- Pour 1 can of tomatoes around the peppers
- After 3 1/2 hours remove caps (if on) and sprinkle with shredded mozzarella
- Leave lid off slow cooker and continue to cook for 1/2 hour.
Notes
Buy smaller sized peppers - we had to put one on top to fit 6.
Mom trick: If you have leftover meat mixture, form into meatballs and put in along with the rest - you get the flavor without the pepper.
