1 1⁄2 lb
Ground Beef
1 c
Rice
1⁄4 c
Onion (Diced finely)
1 t
Salt
1⁄4 t
Pepper
6
Bell Peppers (Any color)
2 cn
Roasted Tomatoes with Garlic (Diced)
1 c
Mozzerella (Shredded)

Instructions

  1. In a bowl, thoroughly combine ground beef, rice, salt, pepper and 1 can of tomatoes.
  2. Cut the tops off the peppers, remove the seeds, wash and dry.
  3. Stuff each pepper with the meat mixture.
  4. Place peppers in slow cookerand put pepper caps back on, if desired.
  5. Pour 1 can of tomatoes around the peppers
  6. After 3 1/2 hours remove caps (if on) and sprinkle with shredded mozzarella
  7. Leave lid off slow cooker and continue to cook for 1/2 hour.

Notes

Buy smaller sized peppers - we had to put one on top to fit 6.

Mom trick: If you have leftover meat mixture, form into meatballs and put in along with the rest - you get the flavor without the pepper.
