Description

Chicken in a dark chocolate Mexican tomato sauce

Main Ingredients: 

Ingredients

4 lb
Chicken thighs (Boneless, skinless (can also use breasts if you prefer white meat))
28 oz
Canned tomatoes
 
Salt

Onion (Chopped)
2
dried ancho chiles (stemmed)
1 cn
chipotle chile in adobo sauce (large )
1 c
almonds (toasted sliced, )
1⁄4 c
raisins
4 oz
bittersweet chocolate (finely chopped)
3 clv
Garlic (smashed)
3 T
Olive Oil
3 t
ground cumin
1⁄2 t
ground cinnamon

Instructions

  • Season chicken thighs with salt
  • Puree canned tomatoes through cinnamon in a blender or food processor until smooth
  • Place tomato mixture and chicken in a slow cooker, cover, and cook on high until for 4 hours (or 8 hours on low).

Serve chicken and sauce on a bed of rice. Top with cilantro.
